Coffee honey is a very special honey and unique, its production is very difficult because the flowering of the coffee tree is short, which forces beekeepers to practice the transhumance of the hives, that is to say, to transport them from one area to another every week during the harvest period. (from mid-August to mid-September in general).

Ideal as an accompaniment to ice cream, pastries or to sweeten infusions for its fruity and mocha taste which gives them a particular flavor while reducing the caloric intake compared to sucrose. Coffee tree honey is also said to ease sore throats.
Recipe idea: cake with nuts, coffee and coffee tree honey Ingredients (for 6 people)
- 125 g walnuts
- 150g flour
- 125g butter
- 150g of sugar
- 3 tablespoons of coffee tree honey
- 3 eggs
- 1 packet of baking powder
- 1 teaspoon of coffee extract
Preparation:
- Preheat the oven to 180° then melt the butter
- Chop the walnuts coarsely
- In a bowl, mix the butter and sugar
- Add the eggs one by one
- Pour in the flour and baking powder and mix until the mixture is homogeneous.
- Add the nuts, the coffee tree honey and mix again.
- Arrange the dough in mini cake molds
- Bake for about 30 minutes at 180°
